Roasted Beat Salad

Ingredients
3 large beets
4oz goat cheese
Tuscan Herb Oliver Oil
White Balsamic Vinegar
Salt and Pepper
1-2 large avocado(s)
Instructions
Preheat oven to 375 degrees
Wash and Slice beets, and place on to non stick cooking tray
Drizzle Tuscan Herb Olive Oil onto beets, salt and pepper beets
Bake for 15-20 minutes until beets are tender
Plate beets into uniform slices (optional - on top of a bed of fresh mixed greens) with sliced avocado, crumbled goat cheese
Top with fresh cracked pepper and a drizzle of White Balsamic Vinegar
